This weekend we had the incredible good fortune of being invited into The BALSAMS kitchen to prepare a Moroccan salmon pasta dish with Chef Joshua Berry. We have much more footage to share with you that focuses on the preparation of the dish, but for now, we leave you with a lesson in Argan Oil. This is a delicacy, a rare treat, harvested in the most interesting of ways… I’ll let Chef explain – enjoy the video!

This Week In Dining

This week we were so fortunate to attend the Louis Jadot Wine Dinner held at The BALSAMS Grand Resort Hotel, and of course, we had our cameras with us to capture every moment! If only the internet was scratch and sniff eh!? We learned a lot about wine from Marc Dupin, a representative from Louis Jadot who guided us through the dinner and wine pairings. The menu was exquisite, and the wine was absolutely lovely. We had an amazing time, and can’t wait for our next culinary adventure! Enjoy!

Dixville Notch is a true Winter Wonderland… it snows almost every day, and the natural beauty around The BALSAMS just seems to never end. We have put together some of our favourite wintery photographs that we have taken during our stay so far for you to enjoy.

Recommendation – pour yourself a big cup of cocoa (with marshmallows of course) and find a nice spot near a fire before pressing play!

The Torchlight Parade at The Balsams Wilderness

This weekend was Winterfest at The Balsams. We spent the weekend, skiing, skating, snowboarding, sledding, sleighing, and taking in the site shown above. All the ski-staff at the Wilderness ski area went down the hill in a pre-defined pattern while holding a long pole with 2 flares on the end. It was amazing.

Alex attempts snowboarding… again

With a camera strapped to my helmet I headed out to the slopes at The BALSAMS with an open mind and a lot of excitement (despite the faint memories of the last time I tried to snowboard floating around in my head). It wasn’t too bad… that is, until I encountered a snowbank… and wrestled with that snowbank for 10 minutes longer than I would have liked.
